Summer Italian Salad

Build a Healthy Beach Bento Box

Mix and match for your own creations by choosing:

This vegetable salad gets a healthy boost from summer's vegetable bounty. Pairs great with grilled chicken and corn on the cobb .

2 to 3 Non Starchy Vegetables

1 Protein 1 Whole Grain or Carbohydrate

1 Fruit

1 Healthy Fat

Makes 10 – ½ cup servings 2 cups Cucumbers, peeled, and sliced 2 cups Zucchini cut in julienne strips, 2” x ¼” 1 1 cup Cherry or grape tomatoes, halved ½ cup Provolone cheese, diced

½ cup Red onion, sliced thin ¼ cup Fresh Parsley, chopped 1 teaspoon Dried Dill weed ½ cup Red Wine Vinaigrette dressing

Asparagus Broccoli Baby carrots Cauliflower Cucumbers Celery Bell peppers Radishes Grape

½ Cup cooked brown or wild rice, couscous, farro, or quinoa

Apple slices Orange slices Cutie ½ Cup serving Blueberries Strawberries Pineapple Watermelon

½ Cup of cooked beans, chickpeas, edamame or lentils 2 Ounces cooked lean poultry or seafood (g reat way to use leftovers)

1 TBSP Low fat mayo or salad dressing 1 TBSP Low fat cream cheese 1 TBSP Pesto 1 TBSP Seeds - chia, pumpkin, sunflower, sesame

1. Combine all salad ingredients except dressing, mix thoroughly. 2. Pour dressing over mixture and toss to combine. Chill for at least two hours before serving to let flavors develop.

Watermelon on a Stick

Low carb wrap Whole grain deli flat Pita Trail mix Rice crackers

Tomatoes Snap peas

Fruit cups, juice packed

2 TBSP Avocado 2 TBSP Nut butter- almond, peanut, or sunflower

2 Ounces low fat deli ham, or turkey

½ Cup vegetable salads

2 TBSP Hummus 2 TBSP Raw nuts : almonds, cashews, walnuts, pecans, pistachios, and peanuts

1 Hard cooked egg

1-Ounce prewrapped cheese wedges or cheese sticks

1. Slice a watermelon into one-inch rounds. 2. Cut each watermelon round into fourths or eighths depending on the size of the watermelon. 3. With a sharp knife, cut a small slit into the center of the green rind, but not as deep as the red juicy flesh of the watermelon. 4. Insert a large craft stick through each slit and push into the watermelon until only about 3 inches of the stick is visible from the bottom. 5.
